In early November, when the green olives begin to ripen, they are harvested. This is followed by a cleaning process, after which the olives are pressed. The less time that transpires between harvesting and pressing, the better the olive oil will be. It is also important not to use artificial heat during pressing: it should be done at room temperature.

No chemicals are used in the processing of extra virgin olive oil.
